Gluten Free French Toast


5 slices gluten free bread
2 eggs
1 cup skim milk
1 tsp. gluten free vanilla
1 tbsp. cinnamon
1 tsp. nutmeg
non-stick cooking spray

Crack the eggs in a flat and shallow dish ( I use a 8” square Pyrex dish). Beat the eggs. Add the milk, vanilla, cinnamon and nutmeg. Blend thoroughly using a whisk.

Coat a griddle/griddle pan with non-stick cooking spray. Pre-heat the pan on medium low heat. Dip the gluten free bread in the egg and milk mixture until saturated. Place on the griddle/griddle pan. Let cook until brown and flip. Continue this process until each slice is browned as desired. Keep the french toast warm on a cookie sheet in the oven until ready to serve.
