Easy Low Fat Mashed Potatoes


I love mashed potatoes but am not fond of recipes that use a lot of fat. If you are like me and are looking for recipes that don’t call for heavy cream, try this easy low fat recipe! These mashed potatoes are also gluten free to boot! Parmesan cheese makes them creamy without adding a lot of fat.

Easy Low Fat Mashed Potatoes


5 russet potatoes, peeled and quartered

2 tbsp. butter

1/3 cup parmesan cheese

1/2 cup skim milk

1/2 tsp. salt

1/4 tsp. pepper


Fill a large pot with water. Add the potatoes. Place the pot on the stove on high heat. Boil potatoes until tender (when they can easily be pierced by a fork). Drain and return potatoes to the empty pot.

Add milk, butter, parmesan cheese, salt and pepper. Use a hand mixer on low speed to blend until smooth. If you want to add a little zip to these mashed potatoes, try serving them with a little horseradish.
