Gluten Free Baked Penne

Going gluten free doesn’t have to be taste free. Try this easy recipe for gluten free baked penne! It’s also low fat!

Gluten Free Baked Penne 

Ingredients

4 cups uncooked gluten free penne regate

2 medium cloves of garlic, minced

2 tbsp. olive oil

1 tbsp. basil paste

1  twenty four oz jar tomato basil sauce

1 1/4 cup shredded mozzarella

1 tsp. salt 

Preheat oven to 400 degrees. Put a large pot of water on to boil. Add salt and 1 tbsp olive oil. When water comes to a boil, add the pasta and cook according to package directions. Drain. In the same pot you used to cook the pasta, heat olive oil on medium heat. Add garlic and cook until lightly browned.  Turn heat down to low. Add the pasta, sauce and basil paste. Stir gently until heated through.

Spray a 9 x 11 glass pan with non stick cooking spray. Add half of the penne to the pan. Spread in an even layer and cover with one cup of  the cheese. Top with the remaining penne then cheese. Bake for 20 minutes or until all the cheese is melted. Makes 4 servings.

 ****While some ingredients are naturally gluten free, make sure to check  the labels of all products to ensure that they really  are gluten free. In this recipe, I used Wegmans brand sauce, oil and gluten free penne.
