Gluten Free Lemon Chicken

Gluten Free Lemon Chicken

Ingredients

2 skinless, boneless chicken breasts, cut in half lengthwise

Gluten free Bisquick for dredging and thickening

2 tbsp. olive oil (extra for boiling pasta)

2 tbsp. fresh lemon juice

1 small lemon, sliced thinly

2 cans gluten free chicken broth

1/2 cup fresh chopped parsley

2 small cloves garlic, minced

1/2 to 3/4 pound gluten free fettuccine

1/4 tsp. salt (extra for boiling pasta)

1/4 tsp. pepper

1 egg

Directions

Fill a large pasta pot with water and put on the stove on high heat. Add some olive oil and salt to the water.  The oil prevents the pasta from sticking, and the salt enhances the flavor of the pasta.

Lay one chicken breast flat on a cutting board, and put your hand flat on it. Carefully use a sharp knife to slice the breast lengthwise down the middle. Don’t cut entirely through; stop just before. Spread the breast out like a butterfly. Repeat with the other breast. In one small flat bowl, beat the egg. Place the Gluten Free Bisquick in another small flat bowl. Dredge chicken in egg, then Gluten Free Bisquick and shake off excess. Dispose of unused egg and Gluten Free Bisquick.

In a large skillet, heat olive oil on medium low heat. Add garlic and cook until lightly browned. Remove garlic and set aside. Add chicken to skillet, cooking each side until browned. Remove chicken from skillet.

Add broth, garlic, lemon juice, parsley, salt, pepper and lemons to skillet. Make sure to scrape up the brown bits. Add the chicken back to the skillet and cook until meat thermometer inserted into the center of each breast registers 180°. While the chicken is cooking, this is a perfect time to boil the pasta. When fully cooked, drain.

Dissolve 1 to 2 tbsp. of Bisquick in ½ cup warm water. Stir until well blended. Add to skillet. Continue cooking until sauce is thickened. You can add additional Bisquick and water if needed.

Serve over gluten free pasta. Makes 2 servings.
