Gluten Free Tuna Casserole

Are you on a gluten free diet and missing tuna casserole? You are in luck! Try this recipe for gluten free tuna casserole! Not only is it gluten free, but low fat as well.

Gluten Free Tuna Casserole

Ingredients

  • 4 cups gluten free pasta (I like to use Wegmans brand penne rigate)
  • 3 five oz. cans of solid white albacore tuna canned in water
  • 1 fifteen oz. can of sweet peas
  • 2 cups corn Chex
  • 2 1/2 cups skim milk
  • 4 tbsp. parmesan cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsps. Garden Gourmet Italian Herb Paste (can use dried Italian seasoning)

Instructions
Preheat the oven to 400 degrees. Spray a 9 x 11 glass pan with non-stick cooking spray.

Crush the corn Chex into fine pieces (I use a Ziploc bag). Drain tuna. Use a fork to break the tuna into smaller pieces.

Cook gluten free pasta according to the package directions. Drain and return to the same pot used for boiling. Add milk, salt, pepper, parmesan cheese, tuna, herb paste and peas (and can liquid). Cook on low, stirring gently, until the milk thickens slightly. Pour everything into the prepared pan. Top with the crushed corn Chex.

Bake for 15-20 minutes. Cool and serve. Makes 4 generous servings.

****A lot of the ingredients in this recipe are naturally gluten free. Be careful to check the labels of all ingredients to make sure they are gluten free.
