Pineapple Ginger Grilled Chicken


Are you tired of the same old grilled chicken? This low fat, gluten free recipe will give your taste buds a kick! In addition, pineapple and ginger are beneficial for those suffering from digestive woes.

Pineapple Ginger Grilled Chicken


2 boneless, skinless chicken breasts

12 ounces pineapple juice

2 tbsp. gluten free soy sauce (a lot of soy sauces contain wheat – always check the label)

3 tbsp. minced ginger root (dried, candied ginger works too)

3 medium cloves garlic, peeled and crushed


Lay one chicken breast flat on a cutting board, and put your hand flat on it. Carefully use a sharp knife to slice the breast lengthwise down the middle. Don’t cut entirely through; stop just before. Spread the breast out like a butterfly. Repeat with the other breast. Place the breasts in a shallow glass pan.

Mix together the pineapple juice, soy sauce, garlic and ginger in a medium sized bowl. Pour the mixture over the chicken. Put in the fridge for at least 4 hours, turning the breasts over periodically.

Remove chicken from pan. Toss the unused marinade.  Place the chicken on a pre-heated grill.  When the chicken starts to brown on one side, flip it. Continue to cook and flip periodically until the internal temperature reaches 180°.

Serve with rice or potatoes. Makes 2 servings.
